Back Country Stir Fry
What are you eating in the back country? Does it make you feel satiated? (Full & satisfied).
I started making my own back packing foods a few years ago when I was going through my initial wellness journey battling SIBO. I found I couldn’t really eat anything that was pre-made and available at REI. I felt frustrated and overwhelmed. So, I started doing some research and playing with my own food.
Life changing!
This particular adventure – we were backpacking only a few miles in, so I had felt comfortable with packing in bit of extra weight.
I grilled up some chicken tenders on the Traeger; chilled and then froze them inside a stasher bag to pack on the trip. I used a stasher bag so that it would hold up well (not leak in my pack.. lol).
Cut up veggies and placed in ziplocks (I would have preferred to use reusable bags, but it was becoming a tad too much weight). Green onions, carrots, mushrooms & bok choy. I was able to squeeze all of these into my Vargo Titanuim backpacking cup!
I sautéed up the veggies in my little skillet with coconut oil and salt, meanwhile I boiled up some water for some rice noodles. (I used the lotus rice noodles- I did use some of the seasoning packet, you could use or choose not to).
Added the pre-cooked chicken to my veggies, heated until warm and drizzled with coconut aminos (I found some individual packets on AMAZON!). Topped with cooked rice noodles. * This can easily be made with dehydrated chicken/beef. Blog post on making your own dehydrated meats coming SOON!!!
Often, a lot of these pre-packaged meals are either too high in carbs, not enough protein and certainly lacking in enough fat! The easiest way for me to balance these- is to make some or all of my food myself. This way we can balance out your macros for your bio-individuality so that your adventure can be pushed to the fullest limits and the most memorable as possible!
This also comes in handy, if you are at a place in your wellness journey where you might be eliminating certain foods and you are finding it challenging to find something you can eat. I will help YOU!
