Brekkie Hash

1 Pound Ground Meat

1 Cup chopped mushrooms

2 Slices Bacon

1/2 Butternut Squash Chopped

1 Tsp Cinnamon

1 apple chopped

Handful of Kale Copped

1/4 Cup chopped onion

Salt & Pepper to taste

Chopped fresh sage * optional

INSTRUCTIONS

Preheat Oven to 350 Degrees

In a large skillet- I used a cast iron dutch oven,

brown ground meat - season with salt & pepper, set aside. Cook Bacon and remove from pan and sauté onions and mushrooms until onions are fragrant and mushrooms are soft. Add butternut squash & apples- cook for 5 minutes add kale & chopped sage and gently sauté for a minute or two. At this time combine the meat, with the veggies, apple, squash and sprinkle with cinnamon.

Cover with lid or foil and place in preheated oven for 40-50 minutes until squash is tender.

Let cool- and place into containers for each morning. Reheat on stove or microwave.
