Dehydrated Chicken Taco Bowls

Anyone else love taco bowls?? How about taco bowls in the wild???

It might be fall, however my heart is NOT ready to let go of backpacking season. We’re heading out this Saturday, so I wanted to share with you my hands down favorite meal I have made thus far.

Again- I’ll share with you. We love tacos in our house. Naturally they are super easy to take camping, backpacking- date nights at the trail head. Tacos.

Super easy to prep and a few hours on the air bath you have yourself a simple and easy backpacking meal.

Deets://

2 Chicken Breasts - Boiled and Shredded

1 Can Black Beans- rinsed and drained

1 Can Diced Tomatoes (I love the ones with green chilies)

2 Tbsp Hatch Chilies if you can find

2 Cups Chopped Kale

1 Cup Chopped Zucchini

1 Cup Chopped Bell Pepper

1 Cup Cooked Rice

1/4 cup Chopped Onion

Packet of Taco Seasoning (If you’re wondering yes, I use taco seasoning A LOT)

Spray Coconut oil

1/4 Cup Nutritional Yeast *Optional

Process://

Boil chicken breast in a pot of boiling water, with 1 tsp sea salt & bay leaf for flavor. Let cool (Toss bay leaf). Once chicken is cooled, rough chop, place in your kitchen add if you have one- use the dough accessory and shred! You want your chicken pieces nicely shredded as it will dehydrate best and RE-hydrate.

Meanwhile, in a stock pot spray coconut oil, add onion/pepper and sauté until translucent- approx. 5 minutes. Add in kale cook until wilted and add in zucchini- cook for a few minutes until softening. Add beans, chicken, rice tomato, hatch chilies, stir- add in taco seasoning. You might need to add a tablespoon or two of water to mix in well however, the tomatoes give some moisture.

Sprinkle with nutritional yeast (optional & to liking).

Arrange well on your fruit leather trays - dehydrate at 145 degrees for 8-10 hours. I like to check on the dehydrating process around 4 hours in, and go through and with a fork and break up pieces to assure everything is getting a nice air bath!

Now: How to cook in the wild!!!//

Divide dried food evenly into zip lock bags, I did approx. 1 1/2 cups of dried taco mixture in each bag.

Process to re-hydrate://

Because I only had zip lock bags on hand prior to our trip, I had to cook the meal in our titanium cups, which is no big deal it worked perfectly. Just keep in mind this method does have a bit more of a clean up process. See below!

Boil water in cup, approx. 1 cup of water for each bag of food. Add food to boiling water, stir and boil for 1 minute, cover with lid and let rest for 15 minutes.

Pro Tip:// Pack in a tiny packet of avocado oil for a little extra boost of fat!

Also, your gentle reminder to eat mindfully, sit down, take 5-10 big deep breaths through your nose and slowly release through your mouth. This can help reduce stress and hopefully get your body in the parasympathetic state (rest and digest). I truthfully find it so easy to enter this relaxed state in nature!

Chew your food, REALLY REALLY good. Like at least 30 chews. This helps break down the food into more digestible pieces and the more you chew, the more saliva is created helping the digestion process!
