GF/DF Grain Free Zucchini Pesto
Hi There! I don’t know about you, but I have not been feeling as inspired as usual in the food creation in my kitchen. I think we can almost all relate to this feeling of "kitchen burn-out". As most of us have been cooking 2-3x meals a day, everyday since March. These are all really valid and overwhelming feelings we are all experiencing. I see you, I feel you, heck I am you!!
Last week, I was finally feeling a bit inspired in my kitchen to cook up a Meatless Monday meal, heck to be straight up honest. It was only because my husband was working late, and I did not have any meat thawed to cook.
GF/DF & Grain Free Zucchini Pesto Pasta

2 Zucchinis - sliced in half sprinkle with salt and let rest on the counter for 20 minutes while this helps remove some moisture. Then chop zucchini.
1/2 Red Onion- Chopped
1 Cup Roasted Walnuts Chopped
I box cooked pasta - I used Jovial Foods Cassava Pasta
1/4 Cup Nutritional Yeast*
1-2 Tablespoons of Olive Oil
Handful of fresh basil
Approx 1 Tsp of Sea Salt
Preheat Oven to 400 Degrees. Roast the zucchini & onions until soft. Meanwhile gently roast the walnuts.

With a food processor, chop the walnuts (until your preference of consistency- I like mine a bit chunky), add the zucchini, onions & sea salt- pulse. Add a tablespoon or two of olive oil. And top with nutritional yeast & basil and pulse until combined. Mix with cooked pasta and sprinkled with a touch more nutritional yeast.
*Note - Nutritional Yeast is Naturally high in B12 Vitamins!! Which is helpful for your immune system, energy and may improve your mood and help you feel less stressed - I don't know about you but I think most of us need more of this today than ever!!
