Instant Pot Egg Bites

8 Eggs

1/4 Cup full fat coconut milk

Pinch Sea salt & some pepper

1/2 cup meat of choice (this works great for left over ham, sausage, bacon)- or no meat.

1/4 Cup chopped arugula

1/4 Cup chopped green onion

1/4 Cup shredded Cheese- if desired.

In a bowl- whisk eggs, add coconut milk.

I used instant pot silicone egg trays- spray with coconut oil. If using any meat, divide amongst cups, same with arugula and cheese. Pour egg mixture on top of veggies/meat until each cup is 2/3 full.

(there is enough for 2 rounds, so you will do this twice).

Sprinkle each egg bite with green onions.

Pour 1 cup of water into instant pot, place trivet on bottom and silicone egg tray on top. Lock lid in place, Select high pressure for 10 minutes. When time is up, let naturally release for 5 minutes then do quick release. Repeat to use up all egg mixture. Or feel free to cut in half.

Serve on top of a bed of lettuce and some avocado. Store extra in fridge or freeze. Reheat in oven or microwave.
