Marinated cherry toms

My cherry tomatoes have been completely unhinged this summer! And marinated cherry toms have been on repeat! I hope you love them.

1 pint of cherry tomatoes, halved

1/4 cup red onion thinly sliced

1/4 cup of quality olive oil

1 TBSP red wine vinegar (or apple cider vinegar)

Salt to taste

1 lemon juiced

Handful of fresh basil/oregano chopped

In a bowl whisky together the oil, vinegar and lemon juice. Meanwhile in a jar add tomatoes, onion and herbs- pour the vinegar mixture over and mix well. Let marinade at room temp for a few hours. Enjoy.

My favorite way to enjoy them: on eggs, salads, steak and pizza.
