Pickled foods - Because pickled foods are a form of being fermented, can help prepare your body for digestion! Note: Eating enough pickled and fermented foods can also boost your immunity! (So important right now, right?).

Also, a win win helps preserve the onions-as these will store will in a nicely sealed Mason jar for almost 2 weeks!!

Deets://

1 Red Onion

1 Heaping

1 Tsp Sea Salt

1/2 cup +/- Apple Cider Vinegar

Pinch of peppercorns

1 Pint Sized Mason Jar

1 tea pot full of boiling water 💧

Process://

Thinly slice onion, place in bowl pour hot water over let sit for a minute and drain. Let cool. Meanwhile add sea salt & peppercorns to mason jar, add ACV. Once onions are mostly cool add to the ACV/Sea Salt, push down to assure all onions are covered add more ACV if need be. Let sit for at least an hour on counter before eating. Store in sealed mason jar in refrigerator for up to two weeks. Although, I'll be surprised if it lasts as you'll be eating these on tacos, burgers, salads and avo toast and they'll be gone in NO time.
