Sautéed Kale Salad with Tahini Miso Sauce

Love me a quick and easy dinner! Lately, I have been on a huge kale kick. Give me the kale! This quick and easy dish has the most delicious and wildly nourishing sauce- Tahini Miso.

Miso contains a particular strain of probiotics that supports your gut’s natural good-bug bad-bug balance.

Miso fermentation process means that miso is rich in enzymes. Fermentation enhances the number of beneficial bacteria in the food. These bacteria are known as probiotics and are thought to help a wide range of health issues, especially for digestion, absorption and assimilation of nutrients.

The ubber fun fact with Miso is some research has shown it can carry up to 161 different bacteria and yeast. Including L. Plantarum which has been shown to help downgrade histamine - so helpful with anyone with allergies. 🤯

Here are the deets://

1 bunch of kale; chopped

1 Carrot; peeled into ribbons

1 Cup shredded purple cabbage

Hemp seeds

1/4 Cup Sliced Red Onion

Coconut Oil to sauté

Sauce://

 

1/4 cup tahini

¼ tsp ground ginger (of course you can use fresh- say 1 inch grated)

1 heaping tbsp miso (I use chickpea)

1 Tbsp coconut aminos

1 Tbsp rice vinegar

1 tsp  untoasted sesame oil

2 tsp maple syrup (plus more to taste)

Water as needed

For sauce; place everything into a blender- blend add water as needed.

Veggies;

In a pan, heat coconut oil- add kale- sauté until slightly wilted. Add carrots, purple cabbage, and red onion. I like these crunchy so I only saute for a short bit- 1-2 minutes.

Remove from heat. Let cool.

Drizzle with sauce sprinkle with hemp seeds and enjoyyyyy.

This holds up GREAT for camping. Goes well with ground meat and sweet potatoes.
