Asparagus Relish

Who’s ready to up the vibe on their snack boards with some delicious asparagus relish??

2 Cups Chopped Fresh Asparagus

1 Cup Chopped Onion

1 Cup chopped bell peppers - I use a combo of red and green bell

2 Tablespoons Sea Salt

1 Cup Sugar (I only like mine a tad sweet- you could make this a bit sweeter)

2 Tsp Celery Seed

1 Tsp Mustard Seed

1 Cup of Apple Cider Vinegar

Combine:

Asparagus/onion/peppers; sprinkler with salt & cover with cold water- and let sit for at least 2 hours. Drain, rinse and drain.

Combine the remaining ingredients - in a large pan. Bring to boil- add veggies and simmer for approx 10 minutes.

Pack into hot jars, leaving 1/2 in of headspace.

Remove any air bubbles and process in your boiling water canner for 10 so minutes.

This made 5 half pint sized jars.
