Canned Tomatillo Salsa

Tomatillo Salsa- also commonly known as salsa verde (you know that yummy green salsa).

Who’s growing tomatillo’s in their garden this year?? MEEEEE, I think I actually have 2 plants because I just love salsa verde so much. I think you will too! Super super easy, cans and stores well for all winter!

4-5 Pounds Tomatillos - I like to slice in half or quarters

1 1/2 Cups Chopped Onion

2 Cups chopped green peppers- I use a mixture of green bell & poblano & jalapeño (if you can get your hands on roasted hatch chili- that would be so good to add- about a tablespoon or two)

1/4 Cup Chopped cilantro

4 Tsp ground cumin

1 Tsp Sea Salt

1 Cup Vinegar

1/2 Cup Lime Juice

Combine all your ingredients in a stock pot. Bring to a boil, reduce heat and simmer for 15-20 minutes. I use an immersion blender to chop everything up really nice, if you like yours chunky skip this part.

Do a simple taste test to see if you want more salt/lime/cumin or spice. :)

Canning Process:// You will need a water boiling canner

Ladle hot salsa into hot clean jars, leaving 1/2’’ headspace, wipe rim to assure nothing spilled. Adjust the cap/ring. Process for 15 minutes in boiling canner.

Should make around 4-5 pints jars.
