Campfire Hash

Campfire season is upon us and I am craving this!

You can certainly go camping with your ordinary “camping” foods, but why would you? Let’s step up with meal planning this summer with some fun new takes on what to cook over the campfire.

Super easy campfire hash is one of my favorite go to’s! Balanced with fat, protein and carbs! It will have you craving for more as well! Note: if you prep the veggies before hand it will be quick, easy and simple to clean up!

Ingredients //

1-2 Sweet Potatoes (depending on how many people and days) Chopped into cubes. I like to pre-roast these babies at home for a quick re-heat on the fire. Roasted in oven with coconut oil and sprinkled with sea salt.

Bunch of kale. Washed and chopped at home as well.

Eggs- Pack eggs in a cooler safe container (such as https://www.rei.com/product/815420/coghlans-12-egg-holder ) so they don’t break.

*Optional Bacon/Sausage

Fire & fire pit with grate

Cast iron skillet (with a long handle if you can find one)

Let’s get cookin’ babe!

Start with getting your fire going, once it is nicely warming up place cast iron on grate to warm up. If cooking up bacon/sausage cook first as you can use the fat to cook the remaining ingredients. If not, heat up coconut oil and proceed as below. *

*If too much bacon fat remove some very carefully.

Add kale and sprinkle with a pinch of salt, saute to liking. Add cooked sweet potatoes heat. Top with eggs and cook until done to liking.

Top off with bacon/sausage if that’s your fancy.

ENJOY** Consume mindfully around your campfire eaten with a spork.
