Breakfast Meatballs (Paleo & AIP friendly)

Good Morning!! Who says you can’t eat meatballs for breakfast? Not me, because trust me they are so good! I love anything for breakfast that can be made a head of time, frozen and is nicely reheated, travels well for an adventure and is good even cold and eaten with a spork.

Breakfast for me is often one of the hardest meals to consistently incorporate into my daily routine, so I need something that is usually quick and mostly already prepared. Often you will find me eating dinner left overs. We were all raised with being told that breakfast is the most important meal of the day, yet still somehow we still grab a muffin, don’t eat, or make/grab a high sugared smoothie.

So friends- let’s talk about how to start your day off balanced-

EAT!! Yes! Start your day off with a balanced Breakfast my friends! 


Not just any breakfast, ditch the high carbohydrate meals, high sugar smoothie and start your day with a breakfast that is in a quality balance of proteins & fats!!

Smoothies are fine for a snack, but most smoothies are full of high sugared fruits, little to no fat or protein. Interesting thing about blood sugar is... what goes UP goes back down. Every time you eat, your blood sugar raises, and depending on what you eat will affect how much your blood sugar will increase. When your blood sugar increases, it signals your pancreas to release insulin to stabilize the blood sugar. This is a really important process and when your blood sugar raises too much, will cause the blood sugar to also be affected by big drops as well.  This is where energy crashes are coming in, hanger, headaches and moodiness. 

So, those mornings you start with no breakfast, or a high sugar smoothie or muffin you eat quickly on your way to work is really impacting how you feel all day.

Ingredients//

1 Pound Pork Sausage *

4 Slices of Bacon chopped

1 Cup Fresh Spinach chopped

1 Tablespoon green onions

1/2 Cup Mushrooms Sliced, will chop food processor

1/2 Pureed Butternut Squash**

1 Egg (Optional)

Pinch of sea salt

Herbs; I used thyme, sage & some rosemary; approx 1/2 teaspoon of each. Would also be delicious with BASIL!!

Directions//

Preheat oven to 350 Degrees

Slice butternut squash in half, rub with coconut oil and sprinkle with salt; roast until soft.

While the butternut squash was cooking I placed the mushrooms in my food processor and gently pulsed until a nice chunky chop. Meanwhile I also cooked up the bacon in my cast iron skillet until slightly crispy. Cooled and drained.

Once the butternut squash is cooked and slightly cooled I used one half and placed into my food processor (reserved the other half for another meal). Pureed the squash, I only needed about 1/2 a cup so I used the remaining for another meal as well.

I placed everything into bowl and mixed until combined.

Using a 1/4 measuring cup, I portioned out the mixture and formed balls. Placed into the slightly bacon greased skillet and placed in oven at 350 degrees. Cooked until the center of the meatballs came to 165 degrees.

* can use any sausage or ground meat, check for Paleo & AIP Compliance

**this recipe would be delicious with any winter squash puree and/or sweet potato

ENJOY** Consume mindfully and best indulged amongst the outdoors and eaten with a spork. Yet, eating peacefully dreaming of such will do as well.
