Radicchio Salad

As some of you now, I love grocery shopping! I also love picking up something I’m not too sure how to cook or what to do with it. Sometimes it’s a hit and well often, it is a fail. However, this gorgeous vegetable was a major hit in my house this week and it has left me obsessed!

What is radicchio you might be asking? It is variety of leaf-chicory yet resembles lettuce or a red cabbage. Radicchio is a veggie that is rich in Vitamin K!! It is on the bitter side, which I love! If the bitter is too much for you, see my notes below!

Recipe//

Ingredients

1 beautiful head of radicchio - chopped

Handful of chopped red butter lettuce

Handful of fresh fill chopped

Handful of walnuts

Pomegranate seeds to taste and desire (the more the merrier)

Pancetta - Optional

Dressing

1 tablespoon olive oil

1 tablespoons apple cider vinegar

1-2 teaspoons GF grain mustard

Salt & pepper to taste

If too bitter ****I chopped the radicchio rinsed and soaked in ice water for 2-3 hours. This helps reduce the bitterness of the veggie.

While the radicchio is soaking in the ice water, make the dressing. After 2-3 dress the radicchio.

Note, the radicchio holds up very nicely over night with the dressing. So you might want to double the dressing, if your radicchio was large!

Sauteed the pancetta, add the walnuts at the end and cool.

Add, the pancetta, walnuts, dill, pomegranate seeds and the chopped red butter lettuce and enjoy.
