Chicken Verde Soup

2 Cups Salsa Verde (I used a home canned recipe- which I'll share later 😉). However any will work- yet using your garden bounty of tomatillos this summer makes this a MUST to can this year. (Watch for this recipe).
2 Cups Bone Broth (or stock)
1 Can of White Beans
1/2 Cup EA of chopped- sweet onion, red & green peppers
1-2 Cups Shredded Chicken
Olive Oil
Sea salt
Toppings- come on, soup is about the toppings
Avocado
Radishes
Cilantro
Green onion

Heat olive oil in stock pot - add onion, peppers- sprinkle with sea salt and cook down until soft (10 min?).
Add in chicken, beans, stock and salsa Verde.
Simmer for around 20 minutes.
Note- you could certainly omit the chicken all together and use only beans to make a white bean Verde. Yumm.

Sprinkle with some cumin and hot sauce if you feel inclined.

This recipe freezes well for batch cooking.
