Here I'll guide you through some simple steps on making chicken bone broth.
1 Pasture Raised Chicken Bones- I like to buy a chicken, roast and remove meat from bones, keeping the skin.
Or for beef broth- I contact my local rancher and buy their “Soup bones”. For beef bones-
Blanch theBeef Bones
Divide the bones between two large pots and cover with cold water. Bring to a boil over high heat and simmer for 10-15 minutes before draining and rinsing the bones with water.
Do you have to blanch the bones? The answer is no. However, I recommend, especially if you’re making broth from beef bones, that you do blanch them first. If you’re using chicken bones or chicken feet blanching (chicken feet at the store have usually already been blanched!) is less important, but beef bones really need this extra step, especially if you want a clear stock.
I HIGHLY recommend you roast the bones and veggies first, as this makes the broth extra tasty! Preheat your oven to 450 degrees F. Transfer the bones and vegetables (carrots, onions, garlic, celery) to the roasting pans. Avoid piling them all on top of each other- use two roasting pans, if necessary. Roast for 30 minutes before gently tossing the bones and vegetables, and roasting for an additional 15-30 minutes more.
.
Fresh Veggies to use-
Carrots- 2-3 rough chop
Celery 2-3 rough chop
Green Onion, white onion or red - any will do. I like to use about 1 medium and rough chop
Add in a tablespoon or two of Apple Cider Vinegar (the kind with the mother)- this helps pull the nutrients from the bones.
Herbal Add- Ins:
Calendula, thyme, sage, rosemary, nettles, echincea. You could also add in mushrooms and/or mushroom powder.
.
If you can find chicken feet- add in those. I pick them up at my Local Food Co Op.
Ways to make nourishing bone broth: instant pot (my favorite) or slow cooker (2nd favorite)
.
For Instant Pot:
Fill to max line on IP with filtered water.
High Pressure for 3 hours- and let naturally reduce pressure.
.
Crock Pot:
Transferr the roasted bones, veggies, herbs, and spices to slow cookers, cover with cold water- splash of apple cider vinegar, and cook on low for 24-48 hours with the lid slightly ajar. Add additional water, as needed, to keep the bones covered
Once the bones have simmered and your broth is ready, you will need to strain the broth through a fine mesh-strainier.. For an extra clear broth, strain a second time through a food-grade cheesecloth
Bone broth stores well in the refrigerator for approximately 5 days. If you make a large batch, I recommend freezing smaller batches in the freezer for up to 6 months
This should make enough to last a week.
Enjoy.
