Curried "Tuna" Less Tuna Salad
Years, ago when I started my Meatless Monday venture I made a tuna-less sandwich made with chickpeas, it was so awful I think I messaged my husband and said, "don't eat that sandwich". No joke, it was so bad.
So, when he asked for a lunch recipe, I knew where to start. I had to make this sandwich edible.
And, oh boy. Did I!!

"Tuna" Filling
1 Can Chickpeas
1 Tablespoon Avo Mayo
1 Tablespoon Yellow Mustard
1 Tablespoon Sweet relish
1-2 Tsp Apple Cider Vinegar
1 Tsp Curry Powder
Sea Salt to taste
Using a masher (I used a pastry blender), slightly mash the chickpeas. You don't want them creamy! Add avo mayo, mustard, apple cider vinegar and sweet relish. Softly stir together. Sprinkle with curry powder and salt.
I let set overnight in fridge to combine all flavors however, sitting in fridge for up to one hour will do just fine.
Spread between two slices of bread, top with sprouts, lettuce or both. And enjoy.
