Dehydrated Green Banana Chips

I recently bought a cluster of bananas. Strangely, they never wanted to ripen. I tried all my tricks, I placed them next to other ripe fruit and even put them in a brown paper bag for a few days. Nothing, they didn’t even start to turn the slightest bit of yellow. After nearly a week and a half, I started thinking of ways I could use up these very green and starchy bananas!


So here I have- Dehydrated Green Bananas!

Ingredients://

Cluster of Bananas - Peel (Literally use a vegetable peeler)

2 Tablespoons Coconut Oil

1 Teaspoon Sea Salt

1/4 + 1 Tablespoon Coconut Aminos

Mesh Dehydrator Trays

Peel bananas and slice with mandolin, I used the 1/8 setting. Place in a bowl. Heat coconut oil, mix in sea salt and coconut amino. Drizzle with coconut oil/amino and sea salt mixture. Mix well. And let marinade for at least an hour. Stir gently, every once an awhile maybe 2-3 times within the hour. Make sure to not break apart the bananas! This is just to get flavor on each piece! Now, be careful if you notice the bananas are starting to break down too much and be mushy, transfer them to the dehydrator trays!

Now place on the mesh trays, remember not to crowd and dehydrate at 135 degrees for 8 to 12 hours.

Best enjoyed in a trail mix! Mix with sunflower/pumpkin seeds, almonds, cashews, dehydrated apples/pears. Yummm! Sweet and savory combo is perfection!



Fun fact! Green Bananas are a great source of “Resistant Starch!”

Resistant starch “resists” the process of breaking down into sugars. This may help lower blood sugar levels. Additionally, it may help you feel more satiated (full).

Another bonus to green bananas and other forms of resistant starch is that it helps form good bacteria in the gut.
