Fall Kale Salad
Who loves a fall inspired salad?
Cozy season has me craving spice and everything nice all fall and winter! Hopefully this will be a kitchen staple for you as it is in my kitchen!
Fall Kale Salad!
4 cups chopped kale
Half red onion sliced
1 Sliced pear
Spicy Shallot Vinaigrette
2 tablespoons red wine vinegar or (Idaho Kombucha Vinegar)
1 1/2 tablespoons Hot Eric Honey Original
1 teaspoon dijon mustard
1 shallot diced
1/4 teaspoon salt
1/3 cup olive oil
Massage the kale with a tablespoon or so of the dressing and let it sit for 5 to 10 minutes. I like to season the kale at this point with salt and pepper too.
Slice the pears and red onion, top with pumpkin seeds with the kale and toss well. Serve with the vinaigrette!
Great with quinoa, grilled chicken and even some roasted root veggies if you have them!
