Fresh Rolls in a Bowl!
Deets:// Ingredients I suggest you should use!
2 Carrot Sliced Julienne
1/2 Orange Pepper thinly sliced
1 Cup Thinly sliced purple cabbage
1 Cucumber Sliced Julienne
1/2 Cup Green Onion
2 Cups Mung Bean Sprouts
Rice Noodles (I use Lotus Rice Noodles- 1 rice patty), Could also use Kelp Noodles, Zoodles or Cauli Rice.
Herbs: basil, mint & cilantro all combined together tastes amazing!
1 Avocado
1 Tbsp Sesame Seeds
Red Pepper Flakes

Sauce://
1 Medjool Date Pitted (soften if needed)
2 Tbsp Apple Cider Vinegar
2 Inch Ginger- peeled and chopped
1/4 Cup Veggie Broth or Water will do just add a touch more coconut Amino
1/4 Cup Coconut Amino
1 Tbsp Sesame Oil
1 Tbsp Tapioca Starch
2 Tbsp Peanut Butter (You could also use almond for Paleo)
The Process://

Bring a pot of salted water to a boil, add rice noodles, cook until done drain and add to a bowl of ice water to stop the cooking. Drain again and set aside.

Sauce: add all ingredients to a bowl and blend together.

Prepare vegetables - slice/chop. Add all veggies to bowl, top with rice noodles and mung beans and all the herbs. Drizzle with peanut sauce. Add some slices of avocado and sprinkle with sesame seeds and red pepper flakes to liking. Enjoy.
