Savory Buckwheat Breakfast Stir Fry
If you haven’t already had buckwheat you are probably wondering, what is it? And does it have wheat in it? No, buckwheat is actually not part of the wheat family at all! In fact, buckwheat is a relative of rhubarb, and naturally wheat/gluten free! While, most of us will think of Buckwheat as a grain, when in fact it is technically a seed! Using it as a grain, is totally OKAY!
Making it one of my favorite go to’s. It’s delicious cooked up and eaten in place of oatmeal or brown rice. Or added to your granola for a nutty crunch.
Fun Fact- Buckwheat groats carry all 9 essential amino acid profiles making it a complete protein to boot!
Now days, you can almost find buckwheat groats at any Market, if you have trouble finding them go to your local Health Food Market, they should have them!
Savory Buckwheat Breakfast Stir Fry- Drizzled with Lemon Tahini Dressing.
Ingredients://
Buckwheat Groats - 1 Cup
1 3/4 Cup Water
1 Bunch of Kale Chopped
1 Red Pepper Sliced
2 Cups Mushrooms Sliced
1/2 Sweet Onion Sliced
1/2 Teaspoon Sea Salt
1 Tablespoon Coconut Oil
Lemon Tahini Dressing- I used this amazing Recipe by Minimalist Baker: https://minimalistbaker.com/make-tahini-dressing/
Toppings: *Optional : Feta Cheese, pumpkin seeds, chopped fresh dill, poached egg!

Buckwheat Groats: Boil 1 3/4 Cup Water, with a pinch of sea salt. Once boiling, add 1 cup of buckwheat. Return to boil and reduce to low. Simmer for 10-15 Minutes until tender, if any remaining water, gently drain.
Meanwhile, in your skillet heat 1 tablespoon of coconut oil. Add onions and peppers and cook until fragrant, approx 5 minutes. Add in mushrooms and a sprinkle of sea salt. Cook down until everything is tender.
While the veggies continue to cook - mix together the dressing above!
Lastly, add the kale and a pinch of sea salt and cook until welted and tender.
Time to assemble your bowl! Take 1 full cup of cooked buckwheat groats, top with some stir fried veggies and drizzle with the Lemon Tahini Dressing. I topped mine with feta cheese, dill and sprouted pumpkin seeds. I do think a poached egg on top would be divine!
