Spicy Paleo Crock Pot Carnitas
We take taco nights pretty serious around here. Wait, excuse me. My husband, takes taco nights really serious around here. And, I do the cooking so therefore, taco night is serious. When, Chris and I started dating, I quickly learned how important Tacos were in his routine. I can hear it loudly, still being told- “everything goes in a tortilla”. So naturally, I had to help him up his taco game.
Most know by now- I am not much of a beef eater. I like red meat in the form of wild game however, when we are out you’ll find me looking for chicken, turkey, pork or fish!! Not only that. Truth be told, carnitas are my favorite hands down!
Ingredients://
3-4 Pounds Pork Shoulder Roast
1 Sweet Onion - Chopped
1 Jalapeno (seeds removed)- Chopped
1 Large Lime
Handful of fresh oregano
2 Bay Leaves
I package Siete Foods Spicy Taco Seasoning (reserving a tablespoon) - https://sietefoods.com/collections/taco-shells/products/spicy-taco-seasoning. If you can’t find this product, make your own. A lot of packaged taco seasonings have added cane sugar, and usually are not gluten free. Place the roasted into your crock pot, sprinkle with the taco seasoning, and rub the taco seasoning into the the roast.
Place chopped onions and jalapeno around the roast. Squeeze the juice from the lime onto the roast, feel free to toss the lime into the crock pot with the onions!
Toss in your oregano and bay leaves. Set crock pot at low for 6 hours.
When you come back, remove the bay leaves and lime, shred the pork into the juices and sprinkle with the remaining taco seasoning.
